Sautéed Baby Bok Choy | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 2

TOTAL TIME: 10 minutes

Ingredients

12oz (340g) baby bok choy

1 tbsp (15ml) fresh-pressed extra virgin olive oil or avocado oil

2 cloves garlic, thinly sliced

2 tsp (10ml) grated gingerroot

1/4 tsp (1ml) sea salt

2 tbsp (30ml) water

Directions

1) Trim the ends of the baby bok choy and slice in half lengthwise. Wash really well to get rid of any dirt and set aside.

2) Heat a large skillet over medium heat. Once hot, add in the oil and garlic. Cook for 30 seconds, then add in the baby bok choy, ginger and salt. Stir to combine and cook for 1 minute.

3) Pour in the water and cover with a lid. Let the bok choy steam for 2 minutes, then remove the lid and continue sauteing until just fork-tender, about 1 minute. Enjoy immediately with your favorite protein.
