Silky Zucchini Soup | Gluten-Free | BoneCoach™ Recipes

SERVES: 4

TOTAL TIME: 25 minutes

Ingredients

1 tbsp (15ml) fresh-pressed extra virgin olive oil

1 yellow onion, small diced

1/4 tsp (1ml) sea salt

4 zucchini, thinly sliced

3 cloves garlic, finely minced

1 bay leaf

1/4 tsp (1ml) dried thyme

2 cups (500ml) chicken bone broth

Directions

1)Heat a large pot over medium heat. Once hot, add in the oil (or ghee or butter), onions and salt. Cook for 5 minutes, stirring often until golden.

2) Add in the zucchini, garlic, bay leaf and thyme. Cook for 2-3 minutes, until garlic is fragrant.

3) Stir in the bone broth. Cover the pot with a lid and bring to a boil. Lower heat, and continue simmering for 10 minutes until zucchini is soft.

4) Remove the bay leaf and discard. Working in batches, puree the zucchini soup in the blender until smooth. Or use an immersion blender if you have one.
