Smashed Chickpea Lettuce Boats | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 2

TOTAL TIME: 30 minutes

Ingredients

1 1/4 cup (295ml) boiled sprouted chickpeas (not for paleo AIP)

2 tbsp (30ml) finely diced pickles

2 tbsp (30ml) finely sliced green onions

1 perfectly ripe avocado

2 tbsp (30ml) freshly squeezed lemon juice

1/4 tsp (1ml) sea salt

6 lettuce leaves (can use romaine, loose leaf, boston or bibb)

2 tbsp (30ml) hulled hemp seeds (not for paleo AIP)

1/2 cup (125ml) microgreens

Directions

1) In a bowl, combine chickpeas, avocado, lemon juice, pickles, green onions, and salt. Using a fork, mash ingredients together until combined.

2) Divide the chickpea mixture among the 6 lettuce leaves. Garnish with hemp seeds and microgreens. Enjoy immediately.
