SERVES: 4

PREP TIME: 20 minutes

Ingredients

4 cups (946ml) Brussels sprouts, thinly sliced

handful fresh basil leaves, roughly chopped

2 tbsp (30ml) freshly squeezed lemon juice

2 tbsp (30ml) extra virgin olive oil

1/4 cup (60ml) organic hulled hemp seeds

1/4 cup (60ml) organic dried cranberries

1/4 tsp (1ml) sea salt

pinch freshly cracked black pepper (optional)

Directions

1) Toss all the ingredients together and let the salad marinate for 15 minutes before serving.

2) Refrigerate any leftovers for up to 3 days.

This Brussels Sprout Salad would be delicious paired with fish cakes, grilled flank steak or even easy over eggs!
