Ingredients
- 1 lb (454g) lean grass-fed ground beef
- 1 small onion, finely diced
- 2 cloves garlic, finely minced
- 3 carrots, cut into 1/4-inch coins
- 1 bayleaf
- 1 tsp (5ml) sea salt
- 680ml (23 floz) organic passata or strained tomatoes
- 3 cups (750ml) beef bone broth (homemade or store-bought)
- 6 cups (1.5L) savoy cabbage, roughly chopped
- 2 cups (500ml) riced cauliflower (fresh or frozen)
- 2 tbsp freshly chopped dill (optional)
Directions
- Heat a large pot, over medium heat. Once hot, add in the ground meat and cook stirring often, until the meat is no longer pink.
- Stir in the onions, garlic, carrots, bay leaf and salt. Cook for 2 minutes then pour in the cabbage, passata, and broth. Cover the pot with a lid and bring to a boil. When the soup comes to a boil, give everything a stir and decrease the heat to low to maintain a simmer.
- Simmer the soup for 15 minutes or until the cabbage and carrots are fork tender. Add the riced cauliflower and continue cooking for 5 minutes with the lid removed.
- Stir in the fresh dill and enjoy immediately.
