Cantaloupe Prosciutto Salad | Gluten-Free | BoneCoach™ Recipes

Enjoy a taste of summer while supporting your bone health with this delightful Cantaloupe Prosciutto Salad.

Cantaloupe boasts a good amount of vitamin C, which helps your body absorb calcium, a mineral vital for strong bones.

Prosciutto, meanwhile, contains protein, another nutrient important for bone maintenance.

This light and refreshing salad is perfect as a starter or side dish... plus, it's incredibly easy to make!

Cantaloupe Prosciutto Salad | Gluten-Free | BoneCoach™ Recipes

SERVES: 4

PREP TIME: 25 minutes

Ingredients

1/8 cantaloupe, thinly shaved

80g (2.8oz) prosciutto, thinly sliced

142g (5oz) mixed lettuce & microgreens

90g (3oz) bocconicini pearls, halved (optional)

1 tsp (5ml) dijon mustard

1 lemon, juiced

1 1/2 tbsp (22ml) extra virgin olive oil

Directions

1) Layer 3-4 slices of cantaloupe over a slice of prosciutto and roll it up tightly. Repeat with the remaining cantaloupe and prosciutto slices. Cut each roll in half cross-wise.

2) Transfer the mixed greens onto a large platter and arrange the prosciutto rolls on top, along with the bocconicini.

3) Combine the mustard, lemon juice and olive oil in a samll mason jar. Shake until emulsified. Pour over the salad and enjoy immediately.
