Carrot Cake Protein Bars | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 6

TOTAL TIME: 10 minutes to prepare; 2 hours to chill

Ingredients

1/2 cup (125ml) hulled hemp seeds (can be substituted with raw walnuts)

130g (4.5oz) pitted dates

50g (approx. 7) dried prunes

6 tbsp (90ml) grated carrots

2 scoops (20g) Healthy Bones Co. Collagen Peptides

6 tbsp (90ml) unsweetened shredded coconut

1/2 tsp (2ml) ground cinnamon

Directions

1) Place all the ingredients into a food processor or high powered blender. Pulse until all the ingredients are combined.

2) Transfer mixture into a parchment lined loaf pan. Flatten the mixture down and let it chill in the freezer for 2 hours before slicing into 6 bars.

3) Energy bars can be stored in the fridge in an airtight container for up to 3 months. Defrost for 10 minutes before enjoying! Feel free to double up the recipe!
