Ingredients
- 1/2 cup (125ml) plant-based milk of your choice
- 1 pasture-raised egg
- 1 tsp (5ml) avocado oil
- 1 tsp (5ml) pure vanilla extract
- 5 tbsp (75ml) cassava flour
- 1 scoop (13g) Healthy Bones Co. Collagen Peptides
Directions
- In a bowl, whisk together the milk, egg, oil and vanilla. Add in the flour and collagen. Mix the batter well until there are no visible lumps. Let the batter sit for 10 minutes.
- Heat a non-stick frying pan or crepe pan over medium heat. Lightly grease the pan with avocado oil. Pour 1/4 cup of batter into the pan in a thin layer, swirling it around in a circular motion to coat the entire bottom of the pan evenly.
- Cook the crepe for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Carefully flip the crepe with a thin spatula and cook for an additional 30-60 seconds on the other side, or until cooked through and golden brown.
- Repeat with the remaining batter, stacking the cooked crepes on a plate as you go. Enjoy with sweet or savoury toppings!
