Chocolate Avocado Collagen Pudding Bites | Gluten-Free, Dairy-Free

Ingredients
- 1 large hass avocado, sliced
- 1/3 cup (80ml) hazelnut butter or sunflower seed butter
- 1/4 cup (60ml) raw cacao powder
- 3 tbsp (45ml) golden monkfruit sweetener (or maple sugar)
- 1/3 cup (80ml) unsweetened finely shredded coconut
- 2 scoops (26g) Healthy Bones Co. Collagen Peptides
Directions
- In a high-powered blender or food processor, combine the avocado, hazelnut butter, cocoa powder, sweetener and collagen peptides. Blend on high until smooth and creamy.
- Transfer into a bowl and place in the freezer for 2 hours, until mixture is firm and scoopable.
- Roll the avocado chocolate mixture into balls and coat with the coconut. Enjoy immediately or store in the freezer for up to 2 months. Let the truffles defrost for 10-15 minutes before serving.
