Chocolate Avocado Collagen Pudding Bites | Gluten-Free, Dairy-Free

Ingredients
  • 1 large hass avocado, sliced
  • 1/3 cup (80ml) hazelnut butter or sunflower seed butter
  • 1/4 cup (60ml) raw cacao powder
  • 3 tbsp (45ml) golden monkfruit sweetener (or maple sugar)
  • 1/3 cup (80ml) unsweetened finely shredded coconut
  • 2 scoops (26g) Healthy Bones Co. Collagen Peptides
Directions
  1. In a high-powered blender or food processor, combine the avocado, hazelnut butter, cocoa powder, sweetener and collagen peptides. Blend on high until smooth and creamy.
  2. Transfer into a bowl and place in the freezer for 2 hours, until mixture is firm and scoopable.
  3. Roll the avocado chocolate mixture into balls and coat with the coconut. Enjoy immediately or store in the freezer for up to 2 months. Let the truffles defrost for 10-15 minutes before serving.
