Coconut Flour Biscuits with Collagen | Gluten-Free

Ingredients
  • 1/3 cup (80ml) coconut flour
  • 1 tsp (5ml) baking powder
  • 4 large pasture-raised eggs
  • 1/4 cup (60ml) melted butter or ghee or coconut oil
  • 1/4 cup (60ml) shredded aged raw cheese of your choice (optional)
  • 1 scoop (13g) Healthy Bones Co. Collagen Peptides
Directions
  1. Preheat the oven to 375F and line a baking sheet with parchment paper and set aside.
  2. In a small bowl, whisk together the coconut flour, collagen and baking powder.
  3. In a mixing bowl, whisk together the eggs and melted butter. Add the dry ingredients into the egg mixture and fold until well combined. Stir in the shredded cheese and let the batter sit for 10 minutes to thicken up.
  4. Spoon or roll out 6 portions of dough and place them onto the prepared baking sheet. Pat down each one to form a thick disk. Bake the biscuits for 20-25 minutes, until golden on the outside. Let the biscuits cool down for at least 10 minutes before enjoying. Leftovers can be stored in the fridge for a week or in the freezer for 3 months.
