Creamy Arugula Soup | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 4

COOKING TIME: 15 minutes

Ingredients

2 tbsp (30ml) fresh-pressed extra virgin olive oil

1 1/2 cups (354g) sliced leeks, white and light green parts only

1 cup (250ml) onions, diced

1/2 tsp (2ml) sea salt

2 cloves garlic, finely minced

1/2 cup (125ml) raw cashews, soaked overnight in water

142g (5oz) baby arugula

2 cups (500ml) chicken bone broth

4 scoops (52g) Healthy Bones Co. Collagen Peptides

handful fresh basil leaves

Directions

1) Heat a pot over medium heat. Once hot, add in the oil, leeks, onions and salt. Cook for 10 minutes, stirring often, making sure the onions do not burn.

2) Add in the garlic and cook for another minute.

3) Stir in the cashews, bone broth and arugula. Cover the pot with a lid and bring the soup to a boil. Remove from heat and let the soup cool for 15 minutes.

4) Carefully transfer the soup into a blender. Add in the collagen and basil leaves. Blend on high until smooth and creamy. Enjoy immediately.
