Ingredients
1 medium white fleshed sweet potato, peeled and small cubed
3 tbsp (45 ml) avocado or fresh pressed extra virgin olive oil
1 cup (250 ml) onions, small diced
1 tsp (5 mL) sea salt
1/4 tsp (2 mL) black pepper
4 cloves garlic, minced
1 tsp dried oregano
4 cups (1 L) broccoli, florets and stem, chopped (fresh / frozen)
4 cups (1 L) bone broth (chicken / pork / beef)
Directions
1) Bring a large pot of water to a boil. Add the sweet potatoes and cook for 2-3 minutes. Using a slotted spoon, remove the sweet potatoes into a bowl and drain the water.
2) Return the pot to medium heat, add oil, onions, salt and pepper. Stir continuously and cook until caramelized, about 10 minutes. Add in the garlic and oregano and cook for 2 more minutes until fragrant.
3) Stir in the broccoli, sweet potato, and bone broth. Cover the pot with a lid and bring to a simmer over medium heat. Continue cooking for 10 minutes or until the sweet potato is tender.
4) Carefully blend the soup in batches until smooth and luscious. Or feel free to keep it more chunky if you prefer!
