Creamy Puréed Cauliflower with Kale | Gluten-Free | BoneCoach™ Recipes

SERVES: 4-6

TOTAL TIME: 25 minutes

Ingredients

1 bunch lacinato or curly kale, finely sliced

1 large cauliflower, cut into florets

4 tbsp salted butter / ghee / fresh pressed extra virgin olive oil

pinch freshly ground black paper (omit for Paleo AIP)

Directions

1) Bring a large pot of water to a boil. Place kale in the boiling water for 1-2 minutes, until tender. Drain the kale in a colander, squeeze out any excess water, and set aside.

2) Meanwhile, steam the cauliflower for 10-15 minutes, or until fork-tender.

3) Transfer the cauliflower into a blender or food processor. Add in your choice of fat and black pepper, and puree until smooth.

4) Place the kale in a large bowl, and add in the pureed cauliflower. Using a spatula, fold to combine. Adjust seasoning with salt and pepper if desired. Serve with your favorite protein!
