Creamy Puréed Cauliflower with Kale | Gluten-Free

Ingredients
- 1 bunch lacinato or curly kale, finely sliced
- 1 large cauliflower, cut into florets
- 4 tbsp salted butter / ghee / fresh pressed extra virgin olive oil
- pinch freshly ground black paper (omit for Paleo AIP)
Directions
- Bring a large pot of water to a boil. Place kale in the boiling water for 1-2 minutes, until tender. Drain the kale in a colander, squeeze out any excess water, and set aside.
- Meanwhile, steam the cauliflower for 10-15 minutes, or until fork-tender.
- Transfer the cauliflower into a blender or food processor. Add in your choice of fat and black pepper, and puree until smooth.
- Place the kale in a large bowl, and add in the pureed cauliflower. Using a spatula, fold to combine. Adjust seasoning with salt and pepper if desired. Serve with your favorite protein!
