Ingredients
- ½ tsp (2ml) baking soda
- 2½ lbs (about 3 large) sweet potatoes, unpeeled, cut into 1½-inch (4-cm) chunks
- 2 tbsp (30ml) arrowroot starch
- 2 tbsp (30ml) olive oil
- 1/2 tsp (2ml) sea salt
- 1 tablespoon chopped rosemary
Directions
- Preheat oven to 450F and line a rimmed baking sheet with parchment paper.
- Fill a large pot with water and bring to a boil. Stir in baking soda. Add the sweet potatoes and boil for 10 minutes. Drain the potatoes thoroughly.
- Directly toss the par-boiled sweet potatoes with the arrowroot starch, oil, salt, and rosemary on the baking sheet. Roast in the preheated oven for 30 minutes, stirring once midway through roasting.
- Enjoy immediately!
