Cucumber Smoked Salmon Rolls | Gluten-Free, Dairy-Free

Ingredients
- 1 cucumber, thinly sliced using a vegetable peeler or mandoline
- 1 tbsp avocado oil mayo (omit for paleo AIP)
- 90g (3oz) smoked salmon slices
- handful fresh basil leaves or sprigs of dill (optional)
Directions
- Spread a thin layer of mayo onto each slice of cucumber, and layer with smoked salmon and some fresh herbs if using.
- Curl up the cucumber and enjoy!
