Curried Cauliflower Salad | Gluten-Free, Dairy Free

Ingredients
- 4 cups (400g) riced cauliflower (can be purchased in the produce section or prepared at home using a box grater)
- 2 carrots, finely grated
- 1/4 cup (60ml) green onions, finely minced
- 1/4 cup (50ml) sprouted pumpkin seeds (omit for Paleo AIP)
- 1/4 cup (50ml) organic raisins
- 2 tbsp (30ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) honey
- 2 tsp (10ml) curry powder (for Paleo AIP substitute with ground turmeric only)
- 1/2 tsp (2ml) sea salt
- pinch ground black pepper
Directions
- In a small sauce pan, combine the oil, lemon juice, honey, curry powder, salt and pepper. Heat up this mixture on low heat, until just barely simmering. Add the raisins to plump them up and then give everything a stir.
- In a large bowl, combine the cauliflower, carrots, green onions, pumpkin seeds, and pour the vinaigrette overtop. Toss all the ingredients together. Salad can be eaten immediately or stored in the fridge for up to 3 days.
