2 cups (500ml) broccoli florets, cut into bite-sized pieces
6 large pasture-raised eggs, whisked
Directions
1) Preheat oven to 375F and grease an oven-safe 8x8" casserole dish.
2) Heat a skillet over medium heat. Add oil and saute the onion for 3-4 minutes. Then add the ground meat and salt. Cook, breaking up the meat, until no longer pink, about 5 minutes. Transfer meat mixture to a large mixing bowl and set aside.
3) Stir in the broccoli and whisked eggs into the bowl with the meat mixture. Mix until well combined. Pour egg mixture into the prepared casserole dish.
4) Bake for 30 minutes. Let the egg bake cool for 10 minutes before serving. Recipe can be doubled, or even tripled. Any leftovers can be stored in the fridge for up to 3 days. Reheat before enjoying.
