The good news is you don't have to! It's gluten-free, low carb- and keto-friendly, and it's loaded with bone-boosting protein, health-promoting amino acids, and inflammation-fighting antioxidants.

We love to serve this with mashed cauliflower, but any vegetable would make a wonderful side dish.

French Onion Chicken Bake | Gluten-Free | BoneCoach™ Recipes

SERVES: 3

TOTAL TIME: 45 minutes

Ingredients

6 skinless boneless chicken thighs

1 tsp (5ml) garlic powder

1 tsp (5ml) dried thyme

4 large cooking or sweet vidalia onions, thinly sliced

2 tbsp (30ml) grass-fed ghee/butter/ fresh-pressed extra virgin olive oil (for AIP)

1/2 tsp (2ml) sea salt

pinch black pepper (optional)

1/4 cup (60ml) chicken bone broth

45g (1.5oz) gouda or swiss cheese, thinly sliced (optional, omit for AIP)

Directions

1) Place chicken thighs into a casserole baking dish. Season with garlic powder and thyme.

2) Meanwhile, heat a large skillet over medium heat. Add your fat of choice, onions, salt and pepper. Cook for 15 minutes, stirring often until onions are golden.

3) Preheat oven to 400F, and pour the onion mixture over the chicken pieces. Pour the broth over and lay the cheese slices on top of each chicken thigh and bake for 25 minutes. Enjoy with some cauliflower mash or steamed vegetables!
