Garlic Herb Butternut Squash | Gluten-Free, Dairy-Free

Ingredients
- 400g (14oz) butternut squash, small diced (fresh/frozen will work)
- 2 tbsp (30ml) fresh-pressed extra virgin olive oil
- 2 cloves garlic, finely minced
- 2 tbsp (30ml) mixed fresh herbs, finely chopped (parsley/basil/thyme/sage/rosemary)
- 1/2 tsp (2ml) sea salt
Directions
- Prepare a steamer basket and steam the squash for 10 minutes, until fork tender.
- Meanwhile, heat a skillet over medium-low heat. Add oil, and garlic and cook, stirring often until garlic is fragrant and starting to brown slightly, about 1-2 minutes.
- Add the cooked squash into the skillet, along with the fresh herbs and salt. Gently stir to combine and enjoy!
