SERVES: 2

COOKING TIME: 15 minutes

Ingredients

1 shallot, finely sliced

1 tbsp (15ml) coconut aminos or gluten-free tamari

1/2 lemon, juiced

227g (8oz) konjac/shirataki noodles (or substitute for kelp noodles), drained and rinsed

400g (14oz) wild caught snapper fillets (can be substituted with wild caught cod or haddock)

1-inch knob ginger, finely sliced into matchsticks

1/4 tsp sea salt

Directions

1) In a bowl, combine the shallots with coconut aminos and lemon juice. Set aside.

2) Place the noodles into a pie dish. Sprinkle with half of the ginger slices. Carefully lay the fish fillets on top of the noodles and sprinkle the remaining ginger slices on top of the fish. Season with salt.

3) Fill a steamer with enough water to steam continuously for 8 minutes without evaporating. Bring to a rolling boil and steam the fish for 8 minutes.

4) Carefully remove the fish from the steamer and pour the shallot mixture overtop. Enjoy immediately.
