Green Bean Salad | Gluten-Free | BoneCoach™ Recipes

SERVES: 4

COOKING TIME: 10 minutes

Ingredients

1 lb (454g) green beans, trimmed and sliced into 1 1/2-inch pieces

1 tbsp (15ml) fresh-pressed extra virgin olive oil

2 cloves garlic, finely minced

1/4 tsp (1ml) sea salt

2 tbsp (30ml) water

1 lemon, zested

2 tbsp fresh lemon juice

1 tbsp (15ml) fresh dill, finely chopped

1/2 cup (125ml) sheep or goat feta (can be substituted with 2 tbsp nutritional yeast)

pinch ground black pepper (optional)

Directions

1) Heat a skillet over medium heat. Once hot, add in the oil and garlic. Cook for 30 seconds until fragrant, then add in the green beans and salt. Cook for one minute, then add in the water and cover with a lid. Let the green beans cook for 3 minutes. Remove lid and cook for an additional 2-3 minutes or until all the water has evaporated.

2) Transfer the green beans into a mixing bowl. Add in the lemon zest, juice, dill, cheese and pepper. Toss together and enjoy immediately or can be chilled in the fridge and eaten cold.
