Green Beans with Caramelized Onions | Gluten-Free, Dairy Free

Ingredients
  • 2 small cooking onions, finely sliced
  • 4 tsp (20ml) extra virgin olive oil
  • 1/2 tsp (2ml) sea salt
  • 1.5 lbs (680g) French green beans, ends trimmed
  • 3 tbsp (45ml) water
  • 1 tbsp (15ml) maple syrup (for SCD substitute for honey)
Directions
  1. Heat a large skillet over medium heat. Once hot, add in olive oil, onions and half of the salt. Cook for 2 minutes, then lower the heat to medium-low. Continue cooking for 8-10 minutes, until onions are wilted and slightly golden.
  2. Transfer the onions into a bowl. Add the green beans into pan along with the water and remaining salt. Cover the skillet with a lid and cook the green beans for 8-10 minutes, until just softened. Add in the maple syrup and toss to combine. Transfer the green beans onto your serving platter and top with the caramelized onions.
