Ingredients
  • 100g (3.5oz) flaked tuna (or cooked chicken, shredded)
  • 1 tbsp (15ml) avocado oil based mayonnaise
  • 3 slices bread and butter pickles (or dill pickles)
  • 2 rice paper sheets (use 2 coconut wraps if Paleo)
  • 2 romaine leaves, halved
  • 1/4 cucumber, julienned
  • handful of fresh herbs (cilantro/parsley/chives)
  • 2 bone-in wild sardines (optional)
  • 1/8 avocado, thinly sliced
Directions
  1. In a bowl, combine the tuna, mayo, and pickles.
  2. Dip one rice paper sheet in some warm water and place it on your working surface. Lay the romaine lettuce on top, add half of the tuna mixture, along with half of the cucumber and herbs. Place a sardine on top, along with half of the avocado.
  3. Fold the left and right edges inward right up to where the ingredients end. Begin to roll upwards, as you continually gather and compress the ingredients. You want the roll to be tight. Slice in half and repeat with the remaining rice paper sheet.
