SERVES: 2

TOTAL TIME: 25 minutes

Ingredients

2 bone-in organic, pasture-raised pork chops, about 3/4-inch thickness

2 tsp (10ml) low sodium tamari or coconut aminos (for Paleo AIP)

1 tbsp (15ml) apple cider vinegar

1 tbsp (15ml) dijon mustard

1 tbsp (15ml) blackstrap molasses

1/2 tsp (2ml) onion powder

1/2 tsp (2ml) garlic powder

1/8 tsp (1ml) sea salt

pinch freshly cracked black pepper (omit for Paleo AIP)

1 tbsp (15ml) avocado oil

Directions

1) In a bowl combine the tamari, vinegar, mustard, molasses, onion powder, garlic powder, salt and pepper. Whisk until combined.

2) Place the pork chops in a glass container or bowl and pour the marinade over. Coat both sides of the pork chop with the marinade. Marinate for 2 hours or overnight in the fridge.

3) Preheat oven to 375F. Heat an iron skillet over medium heat. Once hot, add in avocado oil, then add pork chops. Sear until golden, about 3 minutes, then flip and cook 2-3 minutes more. Place skillet in oven and cook until cooked through, about 6-8 minutes. Let pork chops rest for 5 minutes before enjoying!
