Kale Yogurt Dip with Collagen | Gluten-Free

Ingredients
- 1.5 cups (375 ml) finely chopped lacinato kale
- 2 cloves garlic, finely minced
- 1 tbsp (15 ml) extra virgin olive oil
- 1.5 cups (375 ml ) organic grass-fed 2% Greek yogurt
- 1/2 tsp (2ml) onion powder
- 1/4 tsp (1ml) sea salt
- pinch freshly cracked black pepper
- 1/3 cup (80 ml) crushed toasted walnuts
- 2 scoops (26g) Healthy Bones Co. Collagen Peptides
Directions
- In a pan, sauté the garlic with olive oil over medium-low heat. Add the kale and cook until wilted (approximately 2 mins).
- In a bowl, combine the yogurt, collagen, onion powder, salt, pepper and kale. Mix until combined.
- Serve with crushed toasted walnuts, and for an extra touch of decadence, drizzle with extra virgin olive oil on top before enjoying with vegetable sticks, fresh pita bread, in a sandwich or as a dip for fish.
