SERVES: 2

TOTAL TIME: 15 minutes

Ingredients

1/2 lb (227g) wild-caught salmon, cut into 1-inch cubes

1 lemon, thinly sliced

2 tsp (10ml) fresh-pressed extra virgin olive oil

2 tsp (10ml) finely chopped basil leaves

1/4 tsp (1ml) sea salt

Directions

1) Soak 2 bamboo skewers in water.

2) Line a baking tray with parchment paper. In a bowl, combine the salmon cubes with oil, basil and salt. Toss to combine.

3) Skewer the cubes of salmon between the lemon slices, and place onto the baking tray. Repeat.

4) Broil the skewers for 5 minutes on one side, then turn over and broil for another 5 minutes, or until salmon is opaque. Enjoy immediately!
