Lemon Panna Cotta | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 6

TOTAL TIME: 15 minutes (+ time for chilling)

Ingredients

2 tsp (10ml) unflavored grass-fed pasture-raised gelatin

1/2 cup (125ml) water

1/3 cup (80ml) freshly squeezed lemon juice

1 tsp (5ml) lemon zest

1 can (400ml) coconut milk

2 tbsp (30ml) raw honey

Directions

1) In a saucepan combine the gelatin and water. Set aside for 5 minutes.

2) Meanwhile, combine the lemon juice, lemon zest and coconut milk in a bowl.

3) Heat the gelatin mixture over medium low heat until gelatin is fully dissolved. Stir in the honey, and then pour into the bowl with the coconut milk. Whisk until just combined and then divide into 6 bowls and chill in the fridge until set.
