One Pot Creamy Salmon | Gluten-Free

SERVES: 4

Ingredients
  • 4x4oz skin on salmon fillets, pat dry with paper towel
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1 small red onion, minced
  • 2 zucchini, halved lengthwise and thinly sliced
  • 2 cloves garlic, finely minced
  • 1 lemon, zested and juiced
  • 1/2 cup (125ml) chicken bone broth
  • 1/2 cup (125ml) heavy cream (or full fat coconut milk)
Directions
  1. Preheat a skillet over medium heat. Once hot add in oil and place salmon, skin side down. Season with salt and sear until golden brown and crispy, 3-4 minutes per side. Transfer fillets to a plate.
  2. Into the skillet, add in the onions, zucchini and garlic. Cook for 5 minutes. Add in the lemon zest and juice, and broth. Simmer for 5 minutes or until broth has reduced by half.
  3. Stir in the cream, and add back the salmon fillets. Cover the pot with a lid and cook for 2 minutes. Serve immediately with rice, quinoa, or salad.
