Pumpkin Alfredo Sauce | Gluten-Free, Dairy Free

Ingredients
  • 1/2 cup (125ml) raw cashews, soaked for 6-8 hours and then drained
  • 1/2 tsp (2ml) sea salt
  • 1 cup (250ml) water
  • 1 tbsp (15ml) extra virgin olive oil
  • 2 cloves garlic, finely minced
  • 4-5 sage leaves (fresh or dried)
  • 3/4 cup (177ml) pumpkin puree
Directions
  1. In a high-powered blender, combine the cashews, salt and water. Blend on high until smooth & creamy. Set aside.
  2. Preheat a large skillet over medium heat. Once hot, add in the oil, garlic and sage. Cook for 1 minute. Then add in the pumpkin puree and cashew cream, mixing until well incorporated. Let the sauce cook down for 2 minutes, then remove the sage from the pan before serving with cooked pasta of your choice.
