Pumpkin Alfredo Sauce | Gluten-Free, Dairy Free

Ingredients
- 1/2 cup (125ml) raw cashews, soaked for 6-8 hours and then drained
- 1/2 tsp (2ml) sea salt
- 1 cup (250ml) water
- 1 tbsp (15ml) extra virgin olive oil
- 2 cloves garlic, finely minced
- 4-5 sage leaves (fresh or dried)
- 3/4 cup (177ml) pumpkin puree
Directions
- In a high-powered blender, combine the cashews, salt and water. Blend on high until smooth & creamy. Set aside.
- Preheat a large skillet over medium heat. Once hot, add in the oil, garlic and sage. Cook for 1 minute. Then add in the pumpkin puree and cashew cream, mixing until well incorporated. Let the sauce cook down for 2 minutes, then remove the sage from the pan before serving with cooked pasta of your choice.
