Pumpkin Spiced Chia Pudding | Gluten-Free

Ingredients
  • 1/4 cup (60ml) whole chia seeds
  • 2 tbsp (30ml) hot water
  • 1 cup (250ml) 2% organic grass-fed Greek yogurt (for Paleo use coconut yogurt)
  • 1/2 cup (125ml) pumpkin puree (homemade or canned)
  • 1 tbsp (15ml) pure maple syrup (for keto, can substitute with monkfruit sweetener)
  • 2 scoops (26g) Healthy Bones Co. Collagen Peptides
  • 1 tsp (5ml) pumpkin pie spice
Directions
  1. In a mixing bowl, combine the chia seeds, water, yogurt, pumpkin puree, maple syrup, collagen and pumpkin pie spice. Using a whisk, mix until all the ingredients are well incorporated.
  2. Divide the chia pudding into two ramekins and let it chill for 2 hours or overnight. Serve with a sprinkle of coconut or shaved dark chocolate for an extra treat if you would like!
