Requiring just zucchini, sea salt, and avocado oil, you can enjoy this easy recipe without a long list of pantry items or fancy ingredients.
Zucchini, a versatile and mild-flavored fruit, serves as the star ingredient of this recipe.
Rich in antioxidants such as lutein and zeaxanthin, as well as vitamin K and magnesium, zucchini offers a great combination of nutrients to support your health and your bones.
1) Cut each zucchini in half lengthwise and score the flesh in a crosshatch pattern so that the salt can penetrate it.
2) Sprinkle salt onto the scored side of the zucchini. Leave the zucchini for 10–15 minutes so that salt has time to draw out moisture.
3) Using a paper towel, pat the zucchini dry. Preheat oven to 450°F. Meanwhile, heat an iron skillet over medium-high heat. Once the skillet is hot, drizzle with oil and place zucchini flesh side down in a single layer. Cook for 5 minutes then transfer the pan into the preheated oven and cook for another 10 minutes.
4) Transfer onto a serving platter and enjoy! Feel free to garnish with some fresh herbs.
