Smashed Chickpea Lettuce Boats | Gluten-Free, Dairy-Free

Ingredients
- 1 1/4 cup (295ml) boiled sprouted chickpeas (not for paleo AIP)
- 2 tbsp (30ml) finely diced pickles
- 2 tbsp (30ml) finely sliced green onions
- 1 perfectly ripe avocado
- 2 tbsp (30ml) freshly squeezed lemon juice
- 1/4 tsp (1ml) sea salt
- 6 lettuce leaves (can use romaine, loose leaf, boston or bibb)
- 2 tbsp (30ml) hulled hemp seeds (not for paleo AIP)
- 1/2 cup (125ml) microgreens
Directions
- In a bowl, combine chickpeas, avocado, lemon juice, pickles, green onions, and salt. Using a fork, mash ingredients together until combined.
- Divide the chickpea mixture among the 6 lettuce leaves. Garnish with hemp seeds and microgreens. Enjoy immediately.
