Stuffed Avocado Shells | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 4

TOTAL TIME: 20 minutes

Ingredients

4 medium perfectly ripe hass avocados, halved and pitted

1 lb (454g) extra lean grass-fed ground beef / veal / turkey

1/2 onion, finely minced

1 cup (250ml) button mushrooms, roughly chopped

2 cloves garlic, finely minced

1 tsp (5ml) chili powder (omit for Paleo AIP, substitute with 1/2 tsp onion powder and oregano or thyme)

1/2 tsp (2ml) sea salt

1/2 lime

1/4 cup (62ml) fresh cilantro, roughly chopped

Directions

1) Using a spoon, widen and deepen the hole where the pit is so you can accommodate more taco filling. Save the avocado as garnish for the end. You can dice into small chunks to make it more visually appealing!

2) Heat a skillet over medium heat. Once hot, add in the minced meat. Cook for 5 minutes, stirring often. Add in the onions, mushrooms, garlic, chili powder and salt. Continue cooking until the vegetables are tender and the meat is no longer pink, about 5 minutes. Remove from heat and squeeze in the lime juice and stir in the cilantro.

3) Fill each avocado halve with the meat filling. Garnish with the reserved avocado.
