Vibrant Kale Sauce | Gluten-Free, Dairy-Free

Ingredients
- 1/2 bunch curly green kale, stems removed
- 1/4 cup (60ml) nutritional yeast (or can use grated parmesan cheese)
- 1/4 cup (60ml) hulled hemp seeds
- 2 tbsp (30ml) lemon juice
- 1/3 cup (80ml) filtered water
- 1 small garlic clove
- 1/2 tsp (2ml) sea salt
- pinch black pepper (optional)
Directions
- Bring a large pot of water to boil. Once boiled, add kale. Blanch for 2 minutes. Remove using tongs, shake excess water, and place directly in the blender.
- Add nutritional yeast, hemp seeds, lemon juice, garlic and water. Blend on high for 45-60 seconds, until perfectly smooth. Season with salt and pepper and add in more nutritional yeast or lemon if desired.
- Serve this vibrant kale sauce over zucchini noodles, cucumber noodles, lentil pasta, Konjac noodles or grain-free cassava pasta.
