SERVES: 4

PREP TIME: 25 minutes

Ingredients

1 large orange, thinly sliced (Cara Cara/Blood Orange/Navel)

1 lemon, thinly sliced

1.5 lbs (680g) wild salmon / arctic char / trout

1/2 tsp (2ml) sea salt

2 tbsp (30ml) extra virgin olive oil

2 tbsp (30ml) fresh dill/basil/oregano finely chopped

Directions

1) Preheat oven to 325F. Lightly oil a large baking dish with 1 tablespoon of olive oil. Lay the orange and lemon slices on the bottom of the pan.

2) Place the fish on top of the citrus slices. Drizzle the remaining olive oil on top of the fish and season with salt.

3) Bake for 20 minutes or until the fish flakes easily. Do not overcook (the top might still look slighly translucent).

4) Sprinkle with the fresh herbs and enjoy immediately.
