Our Festive Winter Salad features antioxidant-rich pomegranate seeds, dark leafy greens, and buttery roasted chestnuts rich in magnesium, manganese, and copper.
This colorful salad is versatile, too - it can be served as a side dish on almost any holiday menu, or it can be a main dish with the addition of your favorite wild-caught fish or pasture-raised protein.

Festive Winter Salad | Gluten-Free, Dairy-Free

Ingredients
- 142g (5oz) baby arugula
- 340g (12oz) pre-packaged slaw mix of your choice (cabbage / brussels / kale / broccoli)
- 2 tbsp (15ml) walnut oil or fresh pressed extra virgin olive oil (for Paleo AIP)
- 2 tbsp (30ml) freshly squeezed lemon juice
- 1 tbsp (15ml) maple syrup
- 2 tsp (10ml) dijon mustard
- 1/4 tsp (1ml) sea salt
- pinch freshly cracked black pepper (omit for Paleo AIP)
- 1/2 cup (125ml) pomegranate arils
- 100g (3.5oz) peeled and halved roasted ready-to-eat chestnuts
Directions
- In a bowl combine the arugula, and slaw mix.
- Whisk together the oil, lemon juice, maple syrup, mustard, salt and pepper. Drizzle over the vegetables and toss to combine. Salad can be made in advanced and stored in the fridge for up to 2 days.
- Before serving, add in the pomegranates and chestnuts! Feel free to serve with additional garnishes such as sliced persimmons or sheep's feta cheese.
