Ingredients
- 1 rice paper wrap (or 1 coconut wrap for Paleo)
- 1 extra-large organic, cage-free egg (not for Paleo AIP)
- 2 tbsp (30ml) finely chopped onion
- 1 tbsp (15ml) finely chopped cilantro
- 3-5 anchovy or herring fillets, marinated in olive oil
Directions
- In a bowl, whisk the egg.
- Heat a large greased cast iron pan over medium heat, once hot add in the rice paper or coconut wrap. Pour the beaten egg over the rice paper and using a fork, spread the mixture to coat the entire wrap.
- Sprinkle in the onions, anchovy fillets, and cilantro.
- Cook for 3-4 minutes until the egg is set. Serve immediately! For a full meal, double or triple the recipe. Feel free to add in any other vegetables, proteins, or even shredded cheese. This recipe is a template for you to customize.
