Korean Beef Zoodles | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 4

TOTAL TIME: 15 minutes

Ingredients

1.5 lbs (680g) zucchini noodles (spiralize at home or buy pre-packaged)

2 tbsp (30ml) reduced sodium tamari or coconut aminos for Paleo AIP

1 tbsp (15ml) toasted sesame oil or coconut oil for Paleo AIP

1 tbsp (15ml) honey

2 cloves garlic, finely minced

2 tsp (10ml) ginger root, finely grated

1/4 tsp (1g) red pepper flakes (optional; omit for Paleo AIP)

1 lb (454g) extra lean grass-fed ground beef or veal

3 stalks green onions, finely sliced

1 tbsp (15ml) toasted sesame seeds (optional; omit for Paleo AIP)

Directions

1) In a bowl, whisk together the tamari, oil, honey, garlic, ginger and pepper flakes if using.

2) Heat a large skillet over medium heat, once hot add in the ground meat. Cook for 5 minutes and break up the clumps with the back of your spatula as you cook. Add in the sauce and zucchini noodles. Toss to heat through, about 2-3 minutes.

3) Remove from heat and stir in the green onions, and garnish with sesame seeds before serving.
