125g (4.4oz) fully cooked sausage or kielbasa, small diced
1 shallot, finely minced
227g (8oz) mushrooms, small diced
227g (4oz) baby arugula
1/2 tsp (2ml) sea salt
Directions
1) Preheat oven to 400F and heat a skillet over medium heat. Once hot, add in the sausage, shallots, and mushrooms. Cook for 8-10 minutes, until mushrooms are softened. Stir in the baby arugula and cook for 1 minute until wilted.
2) Slice each chicken breast on the side about halfway through to create a pocket for the stuffing. Fill each breast with a quarter of the filling and place onto baking tray. Season the chicken with salt and bake for 30 minutes. Let the chicken rest for 5 minutes before enjoying.
