SERVES: 2

TOTAL TIME: 5 minutes

Ingredients

1 cup (250 ml) cooked and mashed butternut squash or sweet potato or

white potato (for a firmer texture, choose potato!)

3 tbsp (45 ml) arrowroot starch

2 tbsp (10 g) Healthy Bones Co. Collagen Peptides

2-125g (4.4oz) can wild sardines in water, no salt added

1 tbsp (15 ml) lemon juice

1 tbsp (15 ml) lemon zest

1/2 tsp (2 ml) onion powder

1/2 tsp (2 ml) dried dill

1/2 tsp (2 ml) sea salt

1 tbsp (15 ml) avocado or fresh pressed extra virgin olive oil

Directions

1) In a bowl, combine all the ingredients together except for the oil. Using a fork mash everything together. Let the mixture rest in the fridge for 1-2 hours.

2) Shape into 6 equal size patties and set on a plate.

3) Heat oil in a large skillet over medium heat. Very carefully place the patties in the pan and allow to cook without disturbing until browned and crispy on the bottom, then very carefully flip each patty so they can get equally brown and crispy on the other side, about 4 minutes on each side. Serve with a salad or use as a hearty sandwich filling!
