Ingredients
  • 1 lb (454g) grass-fed stewing beef, cut into 1-inch cubes
  • 1/2 tsp (2ml) sea salt
  • 1 tbsp (15ml) arrowroot starch (omit for SCD)
  • 1 tbsp (15ml) avocado oil
  • 1 tbsp (15ml) apple cider vinegar
  • 1 onion, diced
  • 1 tbsp (15ml) minced gingerroot
  • 2 cloves garlic, finely minced
  • 1 large carrot, cut into 1/2-inch slices
  • 1 tbsp (15ml) turmeric powder
  • 2 tbsp (30 ml) coconut aminos (omit for SCD and can add a bit more salt to taste)
  • 2 cups (500ml) water
  • 1 large beet, parboiled for 10 minutes, skin removed and cut into 1-inch cubes
Directions
  1. In a mixing bowl, toss together the beef, salt and starch.
  2. Heat a pot over medium heat, once hot, add in the oil and sear the beef cubes for 3 minutes on either side. Transfer into a bowl.
  3. Add in the vinegar. Let the vinegar evaporate for about 30 seconds, then add in the onions, ginger and garlic. Cook for a minute, then add in the carrots and turmeric.
  4. Add in the coconut aminos and seared beef cubes. Stir to combine. Carefully pour in the water and cover the pot with a lid. Bring to a simmer. Once the stew reaches a simmer, reduce the heat to medium low and use a wooden spoon to scrap the bottom of the pan. Cover the pot with a lid and continue cooking for 40 minutes.
  5. Stir in the parboiled beets and continue simmering for 20 minutes. Serve immediately with some crusty sourdough bread or cauliflower rice.
