Simply Roasted Chicken | Gluten-Free | BoneCoach™ Recipes

SERVES: 4

TOTAL TIME: 45 minutes

Ingredients

1 x 3lb (1.8kg) organic, pasture-raised chicken (purchased spatchcocked/flattened or ask butcher to spatchcock for you if possible)

1 tsp (5 ml) sea salt

1/2 tsp (2 ml) freshly cracked black pepper

2 tbsp (30ml) ghee or butter

3 cloves garlic, peeled and crushed

4-5 sprigs of thyme (optional)

Directions

1) Preheat oven to 450F. Using paper towel, pat dry the chicken. Trim any excess deposits of fat.

2) Season the inside cavity with salt and pepper, then flip the chicken, skin side up and season with salt and pepper. Gently slide your fingers under the skin and ease it away from the meat, around both sides of the breast. Carefully smear half of the ghee or butter underneath the skin and place the garlic cloves and thyme inside. Spread the remaining butter evenly over all the skin.

3) Roast at 450F for 20 minutes, then reduce the heat to 350F and roast for another 20 minutes. Let the chicken rest for 20 minutes before carving and enjoying!
