Collagen Crème Brûlée | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 4

TOTAL TIME: 60 minutes (+ 4 hours chilling)

Ingredients

1 1/2 cups (354ml) full fat coconut milk (or grass-fed heavy cream)

1/4 cup (60ml) Lakanto Monkfruit Sweetener with Erythritol (or other similar brand)

1 tsp (5ml) pure vanilla extract

4 large egg yolks

2 scoops (26g) Healthy Bones Co. Collagen Peptides

2 tbsp (30ml) Lakanto Monkfruit Sweetener with Erythritol (or other similar brand)

Directions

1) Preheat oven to 350F and place 4-8oz ramekins on a rimmed baking tray.

2) In a pot, combine the milk or cream, sweetener, and vanilla extract. Place over medium heat, and whisk everything together. Continue heating the milk mixture until it begins to simmer, then remove from heat. Whisk in the collagen.

3) In a mixing bowl, whisk the egg yolks together. Add a small amount of the warm milk mixture to the egg yolks while whisking vigorously. Continue slowly adding the milk mixture to the mixing bowl until all the milk is incorporated. Pour the milk mixture through a fine-mesh strainer to remove majority of the bubbles.

4) Transfer the milk mixture into the 4 ramekins and carefully pour hot water into the baking dish until it reaches halfway up the side of the ramekins.

5) Bake for 35 minutes. Remove from the oven and let the custard cool completely before refrigerating for 4 hours. When ready to serve, sprinkle 1/2 tbsp sweetener over the surface of each custard and oven broil for 30 seconds. Serve immediately.
