Beef and Mushroom Stew | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

COOKING TIME: 75 minutes
Ingredients
2 tbsp (30ml) avocado oil
1lb (454g) beef stewing meat, cut into chunks
1 tbsp (15ml) arrowroot starch
1/2 tsp (2ml) sea salt
1/4 tsp (1ml) ground black pepper (optional)
1 cup (250ml) shallots or onions, diced
2 carrots, peeled and cut on a diagonal
8oz (227g) cremini mushrooms, quartered
3 cloves garlic, minced
3-4 sprigs fresh thyme and/or rosemary (or 1/2 tsp dried)
2 tbsp (30 ml) tomato paste (omit for AIP)
3 cups (750ml) bone broth or water
Directions
1) In a bowl toss together the beef chunks and arrowroot starch. Heat a large pot over medium heat. Once hot, add in 1 tablespoon of oil and beef chunks. Sear the veal chunks on either side, for 2 minutes, then transfer onto a plate.
2) Into the pot, add in the remaining oil, and shallots and cook for one minute. Then add in the carrots, mushrooms, herbs, garlic and tomato paste.
3) Cook for 2 minutes, until garlic is fragrant. Stir in the broth and add the beef back into the pot. Cover the pot with a lid and bring to a simmer. Reduce heat to medium low and continue cooking for 45 minutes.
4) Remove the lid and continue cooking for 10 minutes to reduce the sauce. Before serving, adjust the seasoning with more salt and pepper if needed.
