Carob Truffles | Gluten-Free, Dairy-Free | BoneCoach™ Recipes

SERVES: 20

TOTAL TIME: 2 hours and 15 minutes (plus, chilling time)

Ingredients

1 can (400ml) coconut milk

3 tbsp (45ml) maple syrup

1/4 cup (60ml) toasted carob powder

1/2 cup (125ml) unsweetened shredded coconut

2 scoops (20g) Healthy Bones Co. Collagen Peptides (optional)

Directions

1) Combine the coconut milk, and maple syrup together in a small pot. Place over low heat, uncovered and let it lightly simmer for 2 hours until nice and thick. The consistency should resemble that of mayonnaise.

2) Remove the pot from the stove. Transfer the coconut milk mixture into a bowl, and whisk in 1 tbsp of carob powder, shredded coconut and collagen if using. Place the mixture into the fridge overnight to harden.

3) Place the remaining carob powder into a small dish. Using a small ice cream scooper or melon baller, drop a spoonful of the truffle mixture into the dish with carob powder. Lightly dust and roll into a beautiful truffle. Place onto a serving platter and repeat with remaining mixture. Store in the fridge until ready to serve. The truffles will keep fresh in an air-tight container for up to one week or can be stored in the freezer for up to a month.
