Collagen Carrot Muffins | Gluten-Free, Dairy Free

Ingredients
  • 1/2 cup (125ml) cassava flour
  • 1 tsp (5ml) baking powder
  • 1/4 tsp (2ml) baking soda
  • 1 tsp (5ml) ground ceylon cinnamon
  • 1 cup (250ml) grated carrots
  • 1/2 cup (125ml) walnut butter (other low oxalate alternatives include sunflower seed butter or macadamia butter)
  • 1/2 cup (125ml) plant-based milk of your choice
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) apple cider vinegar
  • 2 scoops (26g) Healthy Bones Co. Collagen Peptides
Directions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl, stir together the flour, baking powder, baking soda, cinnamon, collagen peptides, and carrots. Add in the walnut butter, milk, maple syrup, and vinegar. Stir batter until well combined.
  3. Scoop batter into a paper-lined 12-cup mini muffin tin or a 6-cup standard muffin tin. Bake for 25-28 minutes or until a toothpick inserted comes out clean.
  4. Remove muffins from the oven and cool in the pan for 10 minutes, then transfer to a wire cooling rack. Enjoy immediately or freeze for up to 3 months!
