2 tbsp (30ml) milk of choice (non-dairy if paleo or paleo aip)
3 large organic, cage-free eggs
pinch sea salt
2 tsp (10ml) grass-fed butter or ghee
Directions
1) In a bowl, whisk together the collagen and milk. Then add in the eggs and salt. Whisk well.
2) Heat a skillet over medium heat. Once warm, add the butter or ghee and swirl until melted. Carefully pour in the egg mixture and using a spatula, gently swirl around the egg.
3) Let the egg cook for 1 minute until the edges are set but the center is still slightly soft. Remove the pan from heat and carefully roll the egg into a log and transfer onto a plate. Feel free to garnish with freshly chopped herbs, and serve with a side of vegetables.
