Pistachio Chocolate Collagen Truffles | Gluten-Free, Dairy-Free

Ingredients
- 1/3 cup (80ml) pistachio butter
- 3 scoops (39g) Healthy Bones Co. Collagen Peptides
- 2 tbsp (30ml) cocoa nibs
- 100g (3.5oz) paleo dark chocolate (Hu or Lily’s brand), roughly chopped
- 1/2 tsp (2ml) avocado oil or coconut oil
Directions
- In a bowl, combine the pistachio butter, collagen and cocoa nibs. Mix until smooth and well incorporated.
- Carefully transfer the pistachio mixture into a silicone chocolate mold. Place into the freezer for a minimum of 4 hours.
- Meanwhile, place the chopped chocolate in a heatproof bowl, then set that bowl over a pot of simmering water. Melt the chocolate, stirring often. Remove the bowl from the pot, and add the coconut oil and stir until smooth and glossy.
- Remove the truffles from the freezer. Working one at a time, dip a truffle into the melted chocolate. Use two spoons to roll it around so it’s coated. Place the truffle onto a baking sheet lined with parchment paper. Repeat with the remaining truffles. Let the truffles set in the freezer for 1 hour. Truffles can be stored in an air-tight container in the freezer for up to 2 months. Defrost the truffles for 10 minutes before serving.
