Ingredients
- 4oz (113g) snap peas, thinly sliced on the diagonal
- 1 cup (250ml) cucumber, thinly sliced
- 6-8 radishes, sliced into thin matchsticks
- 2 tbsp (30ml) fresh lemon juice
- 2 tbsp (30ml) fresh-pressed extra virgin olive oil
- 1 tbsp (15ml) freshly chopped dill (or 1 tsp dried dill)
- 1/2 tsp (2ml) sea salt
- pinch black pepper (optional)
Directions
- Place all the ingredients in a bowl and toss to combine!
- Let the salad marinate for 30 minutes before enjoying.
- Salad will keep in the fridge for 2 days.
