Don’t let its simple preparation fool you… Our Lacinato Kale Salad is nothing short of delicious, and it’s brimming with bone-boosting nutrients and antioxidants.
Lacinato kale, sometimes called Tuscan kale or Dino Kale, is a bonafide superfood. It’s rich in vitamins A, K, C as well as calcium, potassium, and fiber. Combined with an anti-inflammatory olive oil dressing, this recipe will quickly become your favorite healthy lunch side salad.
To make it a well-rounded meal, serve our Lacinato Kale Salad with your favorite source of protein, like wild-caught salmon, organic, pasture-raised chicken, or grass-fed steak.

Lacinato Kale Salad | Gluten-Free | BoneCoach™ Recipes
TOTAL TIME: 10 minutes
1 bunch lacinato kale, de-stemmed and thinly sliced
2 tbsp (30ml) fresh-pressed extra virgin olive oil (or walnut oil if not Paleo AIP)
1 tbsp (15ml) finely minced garlic
2 tbsp (30 ml) freshly squeezed lemon juice
1/2 cup (125ml) grated parmesan cheese (If Paleo AIP, can be substituted for 1/3 cup nutritional yeast and 1/2 tsp sea salt)
Pinch of black pepper (optional garnish. Not for Paleo AIP)
1) In a bowl, combine the kale, oil, garlic and lemon juice. Using your hands, massage the kale.
2) Add the parmesan cheese and black pepper and mix to combine. Can be served immediately or stored in the fridge for up to 2 days.
